Aria and Maybe Sammy have teamed up for a new event series and wow

One of Sydney’s best restaurants has joined forces with one of the city’s best bars for a new event series that will showcase their talents combined.

Every Wednesday in October, the team from Maybe Sammy will pop behind the bar at Matt Moran’s harbourside fine diner for Maybe Aria, a night of bespoke cocktails and specially-curated snacks.

Stefano Catino and Andrea Gualdi from Maybe Sammy have put together a creative line-up of concoctions, which will include the Aria di Sammy, made from pineapple skin, Madeira and an aromatic bubble (see below), and the Gran Finale, spiked with Mr Black Single Origin, figs, Oloroso sherry and honey.

From the food side, executive chef Joel Bickford will be holding up his end with a stellar selection of snacks, from raw scallop with potato and caviar, to a macadamia and acacia éclair, designed to complement the cocktail offering.

The collaboration will essentially be a little teaser of the new Aria wine bar, which is slated to open later this year.

Guests will be able to purchase tickets to the event, which will include two cocktails and two snacks for $85. Additional items will be available to purchase à la carte. For more details or to book, head to ariasydney.com.au.
