It’s the news ginthusiasts have been waiting for, Yarra Valley distillery Four Pillars Gin is making the move to Sydney next year, with the gin geniuses behind the Bloody Shiraz Gin set to open a small-batch distillery and drinks lab in Surry Hills.

The new shrine to G&Ts will slot into the 1930s Bussell Bros. building on Crown Street, right next door to the Dolphin Hotel and across the road from Bartolo, creating a new Friday night trifecta of fun.

Creative Director of Drinks, James Irvine, will make the move to Sydney where he will head up an impressive new bar offering, which will showcase all the wonderful things you can do with the juniper-spiked spirit.

Alongside the bar, the venue will also include a retail store, which will sell the complete range of Four Pillars products, from limited edition bottles to their Made from Gin collection, which includes breakfast negroni marmalade, gin pig salami and organic gin chocolate.

The team also plans to bring their 70 litre still ‘Eileen’ up from Healesville, which will allow them to make small-batch craft gin, as well as host masterclasses and tasting events.

And that’s not all. Next year, Four Pillars Gin will also start work on an extension to their HQ in Healsville. Led by Breathe Architects, the project will double the amount of drinking space (cheers to that) and see the creation of a new outdoor gin garden.

Both the Surry Hills drinks lab and the expanded Healesville HQ are slated for completion in 2020.
