Pour yourself a gin, we’ve got good news. The highly anticipated Four Pillars Gin Lab will swing open its doors in Surry Hills this June 12, on the eve of World Gin Day.

Brought to you by the gin-iuses behind the Bloody Shiraz Gin, the new multi-level gin palace will be made up of three distinct venues, a Gin Lab, Gin Shop and a gin-soaked cocktail lounge called Eileen’s Bar.

In true Sydney-style, Eileen’s Bar will be discreetly hidden on the corner of Fitzroy and Crown Street behind an unmarked door distinguished only by four projected dots. Basically, you have to be sober to find your way in (but not your way out). Inside, a bright juniper-blue stairwell will lead you through to a striking bar area, equipped with three bar stations that offer front-row seats to the stirring and shaking action, as well as a number of tables and banquettes for those who would prefer to sip in the shadows.

A menu of gin classics and modern gin masterpieces by Creative Director of Drinks James Irvine will sit front and centre of the drinks menu, accompanied by a range of gin-spired snacks by Made from Gin maestro Matt Wilkinson. We’re assuming that includes their finger-licking gin salt and vinegar chips.

If you go exploring, you’ll also discover the Gin Lab, an experimental laboratory equipped with a full bar and a 70 litre copper still that will be used to make small batches of bespoke gin. You may also stumble upon the Gin Shop, a retail offering that will sell the complete range of Four Pillars products, from limited edition bottles to their Made from Gin range, including a breakfast negroni marmalade, gin pig salami and organic gin chocolate.

To celebrate their grand opening, Four Pillars is putting together a weekend of activities, masterclasses and cocktail-fuelled fun where gin lovers can toast the responsible relaxation of lockdown.
