So, whichever juniper way you sway – negroni anyone? – we’ve whittled down the best bars, distillery tours and gin tasting sessions in Australia, guaranteed to quench your thirst this summer and beyond. Four Pillars Distillery, Yarra Valley
Set in the heart of the picturesque Yarra Valley, just an hour’s drive from Melbourne, Four Pillars’ world-class distillery stocks an extensive collection of award-winning botanical infusions. A visit to the distillery will guarantee samples of some of their finest, including their gold medal-winning Rare Dry Gin, the Bloody Shiraz – a fruity red gin; and the Navy Strength – a perennial favourite, made using Aussie finger limes, coriander, turmeric and ginger. Plus, they’ll throw in a guided tour of the venue itself. Once the tour’s over, head over to the cocktail bar for a cheeky Negroni. Flour Factory, Perth
Home to Perth’s famous gin wheel, at Flour Factory you can either roll up and spin the wheel yourself, or let the bartender take control. Poor Toms Gin Hall
Set in an unassuming Marrickville warehouse, Poor Toms Gin Hall is equal parts mysterious with a double serve of cool. The hall itself boasts a church-like reverie, with a backlit archway, confession-like restrooms and a towering shrine that honours Poor Toms’ legendary gin god, Ginsus. Gin Palace, Melbourne
Keeping gin fans suitably quenched for over 20 years, Gin Palace’s underground cocktail den is a stalwart on the Melbourne gin scene. Dark corners, draped velvets and vintage chaises longues set the scene, but it’s the encyclopedic selection of gins that really draw in the crowds. Adelaide’s first distillery door — Prohibition is a place of refuge, where juniper lovers can indulge in gin flights, cocktails and classic G&Ts. As well as their own infusions, you’ll get to sample gin flights from all over the world in their dedicated tasting room, from local legends to global giants. Work your way through an array of devilish concoctions – think blood orange spritz and cold drip espresso martinis – paired with pizza platters and antipasto boards. Archie Rose, Sydney
Dripping in industrial elegance, this Rosebery-based distillery is primarily an operating production line, but the Brooklyn-style warehouse fit-out and fully stocked bar gives this popular watering hole endless appeal. Copper accents complement retro woods, whilst rustic booths styled at whiskey barrels provide a welcome respite. The bar comes armed with all the spirits you could ever dream of – many of which are distilled by Archie Rose himself.
