Meet the foodie duo slowly taking over the river city.
If you haven’t heard of Botanica Real Food are you really a Brisbane local? The salad-based business has formed somewhat of a cult following in the Sunshine State thanks to its outrageously creative salads and decadent cakes – all tending to be gluten-free but full of flavour.
Botanica is the creation of former personal chefs Ali and Brett Hutley. While it found its start with a store in Red Hill, it soon expanded into a second in Teneriffe. Now, the eatery has turned its attention to coffee with Greenhaus Coffee, sitting two doors down from the Teneriffe space.
“A combination of three things: Space, timing and a love of coffee” inspired the launch of the new sister store, says owner Ali Huntley. The premise of the new space will be exactly that of Botanica’s previous sites – a gourmet destination favouring the time-poor. “Our vision is for a quick and beautiful grab-and-go breakfast spot. One where you are greeted with a smile, served a delicious coffee and can quickly grab a breakfast item you can feel good about.”
But that won’t include trendy offering acai. “There are a lot of smoothie and acai options out there, so we wanted to offer something completely different.” Instead, alongside Allpress Coffee, breakfast options will include the likes of the famed Botanica parfait cups (a granola and coconut yoghurt with a rhubarb and raspberry compote) and the return of their tartines, “Its like fancy sourdough toast all ready to go with toppings like cashew cream and roasted pumpkin with fresh parsley and basil,” described Ali. Spelt baked goods, brioche toasties, porridge and soup are also on their way.
The real difference between this space and the couple’s other ventures (excluding the coffee) is its positioning as a café. “We look forward to offering some very casual footpath dining to the corner where people can sit and enjoy their takeaway coffee and Botanica salad at lunch time, it should create a wonderful atmosphere and sense of community.”
