Restaurateur Maurice Terzini and executive chef Monty Koludrovic have set their sights on the sanga.
The humble sandwich may be one of the food industry’s most unappreciated dishes. But The Dolphin’s Maurice Terzini and Monty Koludrovic are out to prove that the sanga can be impressive as any meal, having just introduced an impressive selection to the bustling eatery’s menu.

On Monday March 13, The Dolphin will launch the Proper Sandwich Lunch Program. From Monday through Friday, 12.00-3.00pm (or until sold out), the eatery will be serving up gourmet interpretations of the simple lunch. Five different offerings will debut each day, rotating from a list of 16 and all available for the budget-friendly price of $12.

“I’ve always had a real love for proper sandwiches. It’s all about awesome bread, the best fillings and perfect condiments. It’s a great example of when simple food, done well, can really bring the goods,” explains executive chef Monty Koludrovic of his sandwich mantra. It’s a belief backed by The Dolphin’s decision to use only the finest of produce in its sandwich artistry, with ingredients procured from the likes of LP Meats, Brickfields Bakery, and Victor Churchill’s.
