A Melbourne favourite arrives in Bondi Beach

Fonda moves to Bondi.

With top LA chef Mark Tagnipez on kitchen duty.

When it comes to Mexican street food, Fonda has Melbourne covered. The booming chain’s success is such that the homegrown latino string of eateries has announced plans to set up shop north of the border in Sydney’s Bondi Beach.

Alongside a new venue, the Mexican chain will also be introducing a new menu that comes courtesy of new executive head chef Mark Tagnipez. Formerly of LA’s E.P & L.P, Mark will be taking over the food and beverage offerings for a ‘more refined’ experience, that will also include table service.

“After 6 years in Melbourne we felt it was the right time to review and evolve the Fonda guest experience and make some significant changes not only to our menu but also to develop a style of service that would better complement the food and enhance the overall dining experience,” says co-founder Tim McDonald.

Mark will be charged with innovating the current Mexican street food menu. “We are really thrilled to have a chef of Mark’s experience and creativity leading our future food and drinks development,” says Tim. Expect a Mexican take on the poke bowl, ceviche tostada and desserts to join the current list.

October will see the Sydney space open on Bondi’s Hall Street. The colourful new eatery has been designed by award-winning architects and interiors studio Studio Esteta. “Our fit outs are always designed with the local neighbourhood architecture and environment in mind and the team at Esteta have done a wonderful job creating a contemporary restaurant that still emulates the warmth and relaxation of a beachy Bondi home,” explains Tim. “The new design features lots of terrazzo, an open plan and a lush inside garden which will create a light and breezy restaurant where guests will want to soak up the beachy vibes and linger long into the night.”
