The pancakes
Naturally, the most popular dish on the menu are the sky-high stacks. You can either go classic – with butter, maple syrup and whipped cream – or try one of the more adventurous versions that include tiramisu, matcha and caramelised banana brulee. If you’re more of a savoury person, they can also be ordered with a side of bacon and eggs.
Cooking technique
The impossibly light and fluffy texture is created by first whipping air into the egg-white batter, then steaming the pancakes on a low heat beneath stainless steel cloches. Due to the intensive cooking process, the cafe is only able to serve 60 pancakes per day, with batches of 20 available at 11am, 3pm and 7pm daily. Diners will be required to line up for a ticket first to guarantee access.
What to order
The souffle pancakes are obviously the major drawcard, but if you miss out there’s also classic pancakes, French toast, and Japanese-style milkshakes and parfaits.
