The hospitality group behind The Butler, The Botanist and Bopp & Tone have opened an all-day café in the Sydney CBD. The new venue was named after co-owner Hamish Watts’ grandmother Hester and, what can we say, she must have been one seriously glam gran.

The old dame has been given a pretty-in-pink makeover which features classic lipstick shades from peachy pink to fire engine red. Herringbone tiles and timber pannelling work together to create a nostalgic, old-world feel that would make your grandma (or anyone, really) feel right at home.

The venue may be pint-sized, but there’s no shortage of dishes to start the day. The full breakfast menu includes all the classics from French toast with coconut crumble and crème fraîche to eggs on sourdough, any way you like them. If you’re rushing to a meeting, there’s also house-made croissants and danishes to-go. Lunch is a more refined affair with upscale takes on salad and sandwiches, like the seared tuna niçoise and woodfired chicken club.

Hester’s brings north shore roaster Gabriel Coffee over the bridge and into the city. Milk coffees are made on their exclusive Calibrate blend with a rotating selection of single origin beans for black coffees. From midday, there’s wine and beer alongside aperitivo-style snacks.
