Leaving the house has become a special occasion in its own right and where better to celebrate than luxe new brunch spot The Mayflower in Darlinghurst. Forget the smashed avo, this stylish newcomer is all about the bougie brunch from butter-poached lobster rolls to brûléed French toast and truffle croque monsieur.

The former Art Deco florist is just as lush as ever, with elaborate floral installations and fresh greenery weaving up and down the two-level heritage site. Expect splashy furnishings from onyx stone tables to resin lighting and velvet chairs in blush shades of rose and lilac.

The Mayflower trades up the usual suspects for inspired plates that revolve around high-quality produce. Think: butter-poached lobster with sea urchin mayo, croque monsieur topped with freshly shaved black truffle and brûléed French toast finished with seasonal berries and edible flowers. Plates may be extremely pretty, but with Momofuku Seiobo chef Jihwan Choi at the helm, you know it’s not just for show.

Not your usual breakfast eggs, The Mayflower offers a complete caviar service. Choose from Ars Italica Osietra, Black Pearl Beluga and White Sterling caviar, which come in 10g, 30g and 50g portions. Sourced from Simon Johnson, the caviar comes complete with homemade blinis, crème fraîche, egg mimosas and chives.

Alongside the barista-made espresso coffee, The Mayflower also serves Altitude loose-leaf teas, PS40 natural sodas and Rok kombucha.
