Vegan croissants and pastries? Oh My! A former Bentley chef has opened a plant-based bakery and café in Glebe that specialises in Latin American brunch fare and vegan-friendly pastries.
The cafe
Owner and head chef David Rigby has put together a Latin American-inspired menu that includes wholesome brunch fare from jackfruit burritos to cauliflower, black bean and adobo tacos or for something sweet, there’s blue corn and blueberry pancakes with coconut ice cream. As well as being plant-based, dishes use organic and non-processed ingredients, where possible.
The bakery
Save some room for the vegan pastries, which include a traditional, almond and chocolate croissant, as well as tarts, danishes and banana bread. Pastries are made using whole wheat stone-ground flour, yeast and coconut sugar with vegetable fats rather than the usual butter.
The drinks
Beyond the soy latte, vegans can order a cap made with a house blend of nut mylks, created specifically to pair with coffee. Beyond the beans, there also chocolate and banana mylkshakes, hibiscus and tangerine kombucha, and organic, low intervention wines and beers.
Getting there
