This $800 million development is set to shake up the Melbourne food scene

Introducing Chapel Street's sleek new Capitol Grand.

Property developer and self-proclaimed ‘serial entrepreneur’ Larry Kestelman has turned his attention to hospitality with his latest project Capitol Grand. The $800 million South Yarra-based precinct will accompany an extensive residential offering with an array of restaurants and bars, all slated for completion early 2020.

Designed by internationally-renowned architects Bates Smart, the new build is heavy on the luxe factor – the 50-floor residential component of the tower promises six-star, concierge-style living (including room service). Downstairs will sit a collection of yet-to-be-confirmed eateries and bars, with breakfast through dinner to be catered to, for residents and visitors alike. The leading food retailer has also already been confirmed to be David Jones Food, whose store will overlook iconic Chapel Street.

Leading the hospitality charge in terms of eateries will be chef Stephen Nairn, who has spent time in top global restaurants Eleven Madison Park and Vue de Monde. Alongside serving as the advisory chef for all hospitality concepts at the venue, Nairn will also be introducing an eatery of his own to the precinct next year.

Kestelman has called Nairn the linchpin in the project. “His incredible skills, alongside an intuitive understanding of local produce and enviable international knowledge makes him an invaluable addition to the team,” says Kestelman.

“Melbourne is a melting pot of cultures which, combined with a seasonal climate, produces some of the best tasting and most exciting food in Australia. I think the city has a global reputation for great tasting food and I aim to evolve the customer’s experience.”

Capitol Grand’s first restaurant will be an all-day dining venue. The 100-seater will be European-inspired, with its menu leaning heavily toward French and Italian cuisines. Scheduled to open in October 2019, the bistro is set to be followed with the remaining bars and restaurants in early 2020.
