And it’s landing in Potts Point.
Adam Wolfers is back in town with a new restaurant in tow. For three-months the famed chef will be holding court in Potts Point, where the latest incarnation of his roving pop-up restaurant has found a new home. The former Gastro Park/Antipodean site is where Wolfers will bring back Ételek (Hungarian for food) in partnership with Marc Dempsey. It’s a continuation of the pop-up which has already taken over Ester, Bar Brosé, Casoni, Canberra’s EightySix and Melbourne’s Lee Ho Fook.
“Marc and I have been looking at more permanent sites for Ételek for quite some time. We have been working closely with the landlord to try to bring this space back to life again, it seems such a shame to have such a beautiful space just sitting there empty,” says Wolfers of the Potts Point move, which will see Ételek move into the neighbourhood from July 25 to October 13.
Ételek’s menu draws on Wolfers’ Eastern European heritage, as well as his time spent in the kitchens of est., Marque, Monopole and Yellow. This time round, Ételek is set to incorporate a stronger vegetable focus with an emphasis on specialty breads. The wine list (curated by Dempsey) will hero smaller products.
“Expect to see lots of new dishes that represent influences of my childhood; influences from Eastern European, Middle Eastern, and North African, with a focus on using Australian produce. There will be a big focus on artisan breads throughout the menu, as well as lots of fun ways to cook vegetables,” says Wolfers of what guests can expect to eat.
Wolfers does promise that Ételek signatures Lángos, dukkah and meat-free parsnip schnitzel will be present. “We will be bringing back a new version of the parsnip schnitty, which will be served with hot sauce, labneh and gherkin,” explains Wolfers, “I’m also excited about the smoked cabbage skewers, flatbread and mustard and Nokedli with sea urchin and walnut.“
Ételek will open from 5pm Wednesday to Saturday and from 2pm on Sundays. There is also talk of one-off Sunday sessions, and a New York-style brunch to be introduced down the track.
