The Sydney chef has traded in his pop-up Ételek for a Queensland favourite.
After two years of roving Australia, Adam Wolfers is laying down roots. The chef has announced that he will shortly retire his pop-up restaurant Ételek in order to set up shop permanently in Queensland, as the new executive chef of Gerard’s Bistro.
Wolfers will be replacing long-term head chef Ben Williamson, who is off to launch his own wood-fired restaurant around the corner in Fortitude Valley. It’s taken Gerard’s six months to find a worth replacement, with news of the latest team member unveiled over Instagram in recent days.
Wolfers’ appointment marks a new direction for the restaurant, which is renowned for its modern take on Middle Eastern cuisine. In contrast, Wolfers has garnered a fan base courtesy of his heavy vegetable-slant, and passion for Eastern European food. Joining the team in mid-May, Wolfers has already confirmed that he will be steering the Gerard’s menu towards lesser known Middle Eastern regions, as well as incorporating native ingredients into the mix.
