Bali’s hottest hotel is coming to Sydney

And setting up shop in a Surry Hills favourite.

After a successful start to its second season, The Dolphin’s Aperitivo series has continued to collect for itself a loyal legion of followers. But while the event has so far lured in culinary talent from within Australian borders (Mitch Orr and David Moyle included) the renowned Sunday session has now procured an Indonesian favourite to lead its latest event.

Balinese boutique hotel The Slow has been confirmed as the latest addition to the Aperitivo line-up. Its owner, former Ksubi mastermind George Gorrow, will be collaborating with Icebergs Group’s Maurice Terzini, taking over The Dolphin for one night only, with ample food, music, and frivolity promised.

In typical Gorrow style, this Aperitivo event will veer from the traditional. First and foremost, the party will be held on the night of Friday, April 27 instead of the typical Sunday eve. Dishes will still be served in the dining room from 6-8pm for $5-7, but crafted by The Slow‘s head chef Shannon Moran.

In-keeping with Indonesia’s reputation for a rowdy nightlife scene, the special event will continue well into the early hours with an after-party to be hosted from 8 pm to 12 am. Music will be provided by LA’s renowned Reverberation Radio, with the walls to undergo an extra special revamp courtesy of art on loan from Surry neighbours China Heights.

“It’s great to return to showcase the project we have working on for the last 2 years, our project titled The Slow focuses, on architecture design, art, fashion, music, and of course food,” says Gorrow. “We are excited to come over and put our spin on aperitivo, a little bit island, a little bit punk, a little bit contemporary, a little food and insane drinks.”
