Emirates One&Only Wolgan Valley is set to reopen its doors next month with an exciting new culinary offering by The Bentley Group.

Sydney diners will be familiar with Bentley boys Brent Savage and Nick Hildebrandt, who are the acclaimed hospo duo behind some of the city’s best restaurants and wine bars, from Cirrus to Bentley Restaurant & Bar, Monopole, Yellow, and more.

The new partnership will mean an exclusive new food and wine experience for the resort, with Brent Savage named Creative Director, Food, and sommelier Nick Hildebrandt taking the title of Creative Director, Beverage.

“We are excited to have talents of the calibre of Brent Savage, Nick Hildebrandt and their Team join forces with Emirates One&Only Wolgan Valley to introduce our guests to a new gastronomic experience here at the resort,” commented Tim Stanhope, General Manager, Emirates One&Only Wolgan Valley.

“One&Only and The Bentley Group have successfully collaborated on previous ventures both here in Wolgan Valley and in The Maldives, where Brent and Nick launched Botanica restaurant at One&Only Reethi Rah.  This is a natural evolution of the partnership, and we are thrilled to have them on board.”

The Bentley Group will take over from James Viles, who recently left the luxury lodge after a brief stint as executive chef.

Brent Savage is widely considered one of the country’s most influential chefs. He’s renowned for creating refined yet exciting dishes that showcase premium produce and cutting-edge technique. Nick Hildebrandt is an award-winning sommelier and a prominent industry figure in the world of wine.

“Over the past decade, we’ve had the privilege of being invited to various One&Only resorts to deliver unique food and beverage experiences to guests,” explains Brent Savage. “The opportunity to expand our relationship with Emirates One&Only Wolgan Valley is truly exciting”, adds Nick Hildebrandt. “We aim to evolve the guest experience by ensuring that each memorable moment at the resort is complemented by an equally special culinary offering.”

Nestled in a private valley and protected by soaring escarpments, Emirates One&Only Wolgan Valley is an ultra-luxe secluded resort made up of forty freestanding villas. Guests can choose to participate in an array of experiences from horse-riding to nature walks, mountain biking, stargazing and hiking, as well as sound therapy and daily outdoor yoga at the One&Only Spa.
