Southern Sydney is set to be the winner.
delicious. columnist and My Kitchen Rules guest judge Colin Fassnidge has added another pub kitchen to his burgeoning ‘By Fassnidge’ empire.
The Irish chef has partnered with the Ryans Hotels group in the family’s Miranda Hotel in southern Sydney, with the latest venture set to open in the first week of February.
As for what that means for the hotel’s menu, diners can expect the same produce-driven, seasonal, nose-to-tail, great-value food ‘By Fassnidge’ has brought to the Macquarie Hotel in Liverpool, Bankisa Hotel in Sydney’s inner south and Terminus Hotel in inner-city Pyrmont.
“You’re going to have your seasonal salads, lots of roast pork,” Fassnidge says. “You’ve got to have the suckling pig sausage rolls, you’ve got to have the fish of the day, which we get from the market. It’s all fresh. We’re going to use suckling pigs from Miranda and Redleaf Lamb.
“It’s a busy spot, lots of families go there. It’ll follow the ethos that we have in Banksia. The whole thing is that people have got a mortgage and they don’t want to spend a million dollars. They just want good food.”
Fassnidge adds that two of his head chefs will take up the reins in the kitchen to begin with at Miranda. “Darwin [Leonarr] from Banksia and Jamie [Gannon] from Terminus are going to go over and sort it out – I’m not going to take all their glory but I’ll be in and out! It’s going to be a flavour of Terminus and Banksia, but we’ll take it nice and easy at the start, and not go too hard too early like at Banksia… that killed us.”
As far as the design of the dining space, Fassnidge plans only a minor freshen-up before the entire venue undergoes a major refurbishment sometime in the future. “We’ll use what they’ve got and we’ll make it better,” he says.
“Paddy Ryan owns Banksia where we are with Banksia Bistro. He loves the format and they want to extend that out to a few more venues,” Fassnidge adds.
“We’re very happy to be in with the Ryans again – they’re a great company. They’ve just gone from strength to strength with Banksia and they’ve put their trust in us, so we’re putting our trust in them for Miranda.”
