Northern Beaches favourite The Collaroy reopens its doors this month as Merivale’s latest beachside destination.
Locals can step off the sand and into the seaside venue where a number of relaxed, fuss-free dining options await. Brought to life by a design team including Kelvin Ho (Akin Creative), Amanda Talbot, Justin and Bettina Hemmes, expect a Hamptons clubhouse vibe with sweeping views of the ocean.
Designed for those sun-dappled days and easy breezy nights, The Collaroy’s ground floor will sport an evolving menu spanning breakfast through to dinner.
Coffee and juices power the drinks side of things with house-made pastries, brekkie pizzas and bowls offering a pre or post swim fuel-up. The health spree continues into lunch with more nutritious bowls of toasted faro, avocado, boiled egg and grilled haloumi among those on offer.
Executive Chef Jordan Toft turned to The Collaroy’s seaside location for his inspiration board, crafting a menu that’s “simple, yet elegant food for a community that loves the sun, surf and sand”. As such, dinner boasts the same level of beachside conviviality with a substantial snacks list to accompany that drink in the other hand. Anchovy toasts with pickled shallots, prosciutto and grissini and ham croquettes make for easy grazing while generous home-style dinners will rotate daily; we’re talking lamb and eggplant moussaka Mondays and a “coastal” Sunday roast come the weekend.
Upstairs, two bars will offer what any self-respecting oceanside menu should – freshly-shucked oysters and local seafood – plus meats cooked on the charcoal grill, burgers and a rainbow of salads.
Local pizza gun Vincenzo Biondini has been brought in to power the wood-fired creations at Vinnie’s Pizza, which will be churning out hand-kneaded slices ferrying fresh Italian-driven produce.
And, being Merivale digs, you can bet on a solid roster of bar talent (they’ve been plucked from The Newport, Papi Chulo and Coogee Pavillion) pouring your drinks, and a cocktail list that will ensure summer trickles right through the winter months.
