You can now take Cornersmith's cooking school classes online

Pickling has never been so high-tech.

Cornersmith have acquired for themselves a devoted following, thanks largely to the inner-west cafe’s pickled goods. For some time now Sydney locals have been able to learn from the masters, thanks to the Cornersmith Cooking School which hosts workshops on preserving and pickling, and everything in between.

But now it’s not just Sydneysiders who will be able to enjoy a class by Cornersmith thanks to the launch of the Cornersmith Cooking School – Online Courses. The project is thanks to the cafe group’s partnership with preserving specialists Kilner and sees Cornersmith Co-Owner Alex Elliott-Howery guide students through a series of preserving methods with video tutorials.

Courses have been designed with modern kitchens in mind, and the equally modern concerns of seasonal eating, food waste, avoiding preservatives, and avoiding supermarkets. The video series is also designed to be appropriate for all skill levels, and will be accompanied by a detailed downloadable handbook for extra assistance, as well as an invitation to join the Cornersmith Homemade Facebook Group, where questions and advice can be shared.

The first online series will be released throughout 2019, and will kick off with Pickling: Vegetables and Fruits. Three key pickling recipes will be shared; two master pickling recipes for vegetables and fruits, and one special pickle recipe. It’s been promised that once you have the trio in your artillery you can pickle just about anything. This particular course will come accompanied with a pickling chart, and troubleshooting guide for general concerns.

“The Cornersmith Cooking School has a strong ethos at the centre of all it teaches, and the online school is an extension of this ethos,” the group explained in a statement. “The purpose of these courses is to bring kitchen skills, like pickling, that have slowly disappeared from homes, back into the everyday. With people now looking for practical ways to eat seasonally, reduce food waste and get out of the supermarkets, these skills are now more relevant than ever.”
