Mary’s continues its burger domination of Sydney with a new outpost opening in Circular Quay today.
Sitting pretty on top of its other uptown eatery, Mary’s Underground (opening late May), the 100-seater located inside the old The Basement is the first in the Mary’s stable to offer a vegan menu.
But meat-eating fans can rest easy: they’ll still be flipping those juicy American-style beef patties and baskets of fried chicken as usual.

If you’re expecting Mary’s vegan menu to sport superfood salads to service the area’s corporate masses, guess again; they’re doing plant-based takes on all the Mary’s classics instead. The vegan fried chicken sees spiced cauliflower florets replacing the bird, and a Mary’s burger with a vegan patty, cheese, bun and plant-based version of their famous burger sauce has been designed to make your carnivorous mates jealous, according to Mary’s co-founder Jake Smyth.

Plus, the whole vegan menu is prepared in a separate area from the meaty side of things using veg-only grills, fryers and cool rooms.
On the more inclusive menu, Smyth and co-founder Kenny Graham say it’s been designed to allow their vegan mates to choose ethics without sacrificing flavour.
Like their other venues, the drinks will be top-notch, with craft beers and a mostly Australian and New Zealand selection of organic wines on offer.
And in true Mary’s style, they haven’t skimped on all the other good stuff either: Mary’s CQ will still be serving up the same loud tunes, hangovers and sauce-dripping good times we’ve come to expect.
