The Three Blue Ducks’ owner has found a new beachside project.
It looks like Bondi’s appeal will shortly be its foodie destinations rather than its beach access thanks to a plethora of new eateries popping up within the suburb’s borders. Joining the likes of newcomer Blanca will soon be a new food space from Three Blue Ducks’ Darren Robertson that is expected to open within two to three months.
The iconic eatery’s co-owner has set his sights on North Bondi, having recently purchased the former site of The Hill Eatery. The space is expected to host a restaurant and bar and will be a creative collaboration between Darren and Cam Northway from Sweet & Chilli Australia.
“I used to live around the corner from the sight for a few years [and] I’m a huge fan of the area,” says Darren. As to what fare will be served, we will be kept in the dark for a little longer. “We are spending time in the space at the moment to get a feel of what we think it needs. We still haven’t finalised a name or menus but food wise we want to create something fun, fresh, tasty and uncomplicated,” he continues.
They may not have a clear direction with food just yet, but Darren has the beverages covered. “We will have a coffee during the day by Single O. The focus will be on the food, however the restaurant will have a bar which will be driven by natural wines and ciders and beers.” he confirms.
