Move over cronut, there’s a new doughnut hybrid in town. Dennis Chan, owner of Dirty Bird Food Truck, has just opened the country’s first mochi doughnut bar – Demochi in Banksia, Sydney.
“By adding traditional Japanese rice flour into our batter, we have created a doughnut with a light crisp outside and the perfect mochi chew inside,” says Chan.
Dennis first tried mochi doughnuts in Japan six years and has spent the last 12 months recipe-testing to recreate their unique texture.
Demochi’s mochi doughnuts will be priced at $4.50 for the original wild honey glaze and $5.50 for flavoured glazes, which will include roasted black sesame, matcha green tea, yuzu mint and cereal milk frost.

Demochi is located next to the Banksia Hotel, where it will open for two days per week, before extending its hours to full-time over the coming months.
