Something big is heading for the coast, courtesy of John Singleton and Sean Connolly.
Most Australians are all too familiar with John Singleton, the developer whose investments range from horse racing to some of the country’s best eatery developments (which include Icebergs Dinging Room and Bar, and the Bells at Killcare Boutique Hotel).
But the Central Coast resident’s latest project hopes to lure city dwellers away from the big smoke and up to the coastal stretch, with an extensive new development with a celebrity chef at its helm. Set to open this August is The Bon Pavilion, an extravagant new eatery at the heart of Singleton’s latest build, the 14-storey Bonython Tower in Gosford.

The sky-high new tower is a fully integrated residential and commercial building, with The Bon Pavilion set to be its signature restaurant which Singleton hopes will become a meeting place for the Gosford community. To help realise The Bon Pavilion, he has reunited with the team behind Bells at Killcare and Pretty Beach House, Brian and Karina Barry.
Joining the Barrys on the team will be the lauded Sean Connolly in the role of executive chef. Connolly is no stranger to larger than life projects, as the man behind a series of eateries strewn throughout Australia and New Zealand, and a growing array of cookbooks.

“We have followed Sean’s illustrious career for many years. His food philosophy focuses heavily on ethically sourced produce and premium suppliers, which Brian and I feel very strongly about,” says Karina Barry of Connolly’s appointment.
“I find as I get older the simpler my food gets,” Connolly explains. “It’s all about the produce driving the flavours. My food looks simple, but there’s a lot of thought process and complexity to the dishes. Good food should speak for itself.”
The eatery itself will be nothing short of massive; think seven distinct different areas that include café Bon Bon Espresso, cocktail and tapas haunt Bon Bar, family-style dining room Bonfire, a WiFi lounge, a specialty craft beer and whisky den, Bon Vin Private Dining, and wine bar Bon Vin.
