Eleven Madison Park is bringing a temporary venue to Aspen.
For foodies, Eleven Madison Park may well be as much of a New York must-visit as is the Statue of Liberty. The adored venue was declared the World’s Best Restaurant by The World’s 50 Best Restaurants back in 2017 and remains within the top five of this year’s accolades, sitting at number four, despite being closed for some time for renovations.
But now the restaurateurs behind the venue, Will Guidara and chef Daniel Humm, have turned their attention to sharing the cuisine of Eleven Madison Park with the rest of America. The team will shortly be setting up shop, albeit temporarily, for a special pop-up dubbed EMP Winter House in Aspen, Colorado.
This isn’t the first time the restaurant has left the Big Apple, with Eleven Madison Park hosting an East Hamptons-based pop-up for the past two summers. But the venue’s latest pop-up marks a distinctly different direction for the restaurant, one that is much, much colder.
The pop-up Eleven Madison Park will be hosted at the St. Regis Aspen Resort, serving a Swiss-inspired menu exclusively to American Express cardholders (who are the event’s principal sponsor). Indoor and outdoor seating will be available for guests, with options to choose between the St Regis’ 95-seat dining room or one of 10 custom-built yurts for the occasion.
EMP Winter House has been inspired by the food favoured by Swiss-born Humm. “It’s really fun that Daniel finally gets to cook this food,” Guidara told the Wall Street Journal.
“There’s going to be a whole section just for soups, which is old school and also very Swiss. This is going to be my favourite menu ever.”
Swiss classics will be placed front and centre at the pop-up. Yes, there will be fondue, of both the cheese and meat variety, accompanied by potatoes, salads, pickled vegetables and pretzels. Diners have also been promised the appearance of the savoury Swiss crepe flädle.
But perhaps more enticing than the chance to indulge in traditional Swiss fare will be the tipple on offer. One of the yurts has already been reserved as an après-ski bar, serving up warm and cold cocktails from 2 pm onwards, including Schümli Pflümli, a blend plum brandy and liqueur with coffee and hot chocolate.
