Reymonds to launch a new Euro dining precinct in Melbourne next month

Frederic or Fred’s? There’ll be tough choices to make when the Reymond siblings, Nathalie, Edouard and Antonie, open their new European dining precinct in Cremorne this September.

The venue is named after their late maternal grandfather, who like their father Jacques Reymond, was also a hospitality veteran.

The new site, located on the ground floor of a boutique office building, will be made up of two adjacent spaces – an upscale European restaurant called Frederic and an all-day eatery known as Fred’s Bar.

Frederic will be the more dapper of the two, with the 75-seater European restaurant set to serve a seasonally-driven menu, prepared by the precinct’s head chef, Nick Deligiannis, who hails from Petit Tracteur. Diners can expect contemporary European dishes like veal tartare in a pine nut cream with a tapioca cracker, sweet corn madeleines with blue swimmer crab and manchego millefeuille with an olive emulsion. It will be the first time that the Reymond trio, who also own Bistro Gitan and L’Hotel Gitan, have broken their French borders to include offerings from wider Europe, including Italy and Spain.

By contrast, Fred’s Bar will be more laid-back, with casual bar seating for just 35 and a sunlit north-facing terrace – the perfect place to wait with an aperitif if Frederic looks a little full. The venue will open all day, starting early with espresso coffees and a rotating menu of continental breakfasts.

A contemporary wine list, the joint oeuvre of Edouard Reymond and Beverage Manager Tim O’Donnell, will feature European and Australian pours, along with a curated selection of bottled craft beers, and two available on tap.

While the venues will have different identities, there will be similarities in the design, which will be coordinated by SJB Interiors, who also collaborated with the Reymonds on L’Hotel Gitan. Inspired by the French new wave and Italian modernism, the interiors will channel old-world elegance, with maroon and green leather upholstery and antique mirrors and furnishings.
