Gelato Messina to launch glow-in-the-dark dessert bar

Eyes won’t be the only thing lighting up.

Faces are set to glow with happiness when a new ultraviolet dessert bar drops in Darling Square this month.

The new Blacklight Dessert Lab will run for three weeks as a part of Vivid Sydney, with the pop-up venue serving up incandescent sweets by Gelato Messina, Bubble Nini, Edition Coffee Roasters and Dopa by Devon, which are all newcomers to the area.

While we wouldn’t usually recommend that you go around eating strange luminescent mushrooms, you can certainly make an exception in this case. The mad scientists over at Gelato Messina have given their famed mushroom cake a magical makeover, adding glow-in-the-dark white chocolate dots to its glazed candy cap. Inside, you’ll find layers of chocolate gelato and peanut butter cookies on a crispy crepe base of feuilletine grass.

Equally as eye-catching is Messina’s dulce de leche gelato cake, which sees a vanilla cream and jersey milk sponge drenched in a luminous pink strawberry glaze.

Beyond the gelato giant, Bubble Nini will be slinging two milk teas made from Messina jersey milk, herbal jellies and luminescent tapioca pearls, while Edition Coffee Roasters has created a Messina coffee gelato and miso caramel cookie sandwich dipped in glow-in-the-dark chocolate.

Each week a different dessert team will take over, with four vibrant treats up for grabs each night. The Messina Blacklight Dessert Lab will be open 6pm – 11pm from May 24 – June 15 at Darling Square in Haymarket.
