And it will be unlike anything that Sydney has seen before.
Queuing at The Grounds of Alexandria is set to be a thing of the past, with Sydney’s most popular brunch spot announcing a massive third venue dropping in the next suburb along.
Taking over the heritage-listed Locomotive Workshop in Eveleigh just behind Carriageworks, The Grounds Roastery will be home to a plant-filled labyrinth of drinking and dining spaces, as well as a state-of-the-art roastery and brew bar, set over 814 square metres.
Nick Ferguson, Head of Coffee Quality and Roasting at The Grounds confirms that they are looking to create a whole new roasting facility, which will be unlike anything that Sydney has seen before.
“It’s basically going to be a world-class coffee roasting facility. It will be equipped with all the best in tech, and have dedicated spaces for research, development and training,” he said.

“There will be endless possibilities of what we’ll be able to do there. We won’t just be roasting the same coffee, we’ll be creating new blends, new roasting styles, new profiles – there will be a whole lot of experimenting going on.”
The new venue will have a fit out by Acme & Co, the design studio behind The Grounds of Alexandria and The Grounds of the City, as well as Rosebery distillery Archie Rose.
“Being an old locomotive workshop, the site has these incredible industrial bones, so naturally we’ll work with the space and do our best to honour the heritage nature of the building,” says Dan Mylonas, The Grounds Brand Director.
Despite being a largely indoor site, The Grounds Roastery is set to have a lush feel with plenty of dripping greenery planned. While details on the design are still being finalised, at this stage they are looking to the internal courtyards of European and North African villas for inspiration.
