Introducing Parlour Group’s Stanton & Co.
Sydney’s Rosebery is booming. If the burgeoning number of apartment blocks in the district weren’t enough to prove it, then the latest news to hit the food scene will. Specifically, Parlour Group – the band behind Riley St Garage, Surly’s and The Village Inn – have announced plans that they will launch a new eatery in Rosebery shortly. Landing in October will be Stanton & Co., joining Rosebery’s The Cannery precinct.
Stanton & Co. is named in ode to the property developer responsible for transforming the former industrial area in the early 1900s. The venue is to be a dining room, bar and open kitchen, and was designed in collaboration between owner Brody Petersen, general manager Bay Kilpatrick, and design firm Alexander&Co.
Brody Petersen is looking forward to becoming a part of the blossoming district. “We are so excited to be joining the Rosebery neighbourhood. The area is thriving and has really come alive as a leading food destination in Sydney; it is inspiring and exciting for us to be surrounded by people who share our passion for great food and drink. We want to create a beautiful venue that is fun, relaxing and vibrant, a place where guests feel like they are eating at a bar rather than drinking in a restaurant,” he says.
Leading the kitchen at Stanton & Co. will be executive chef Regan Porteous, who will be joined by head chef Marcelion Papio. It is not the first time the duo have worked together, with both former employees of Parlour Group’s Riley St Garage. The team have designed two new distinct menus for the new restaurant, which will serve up modern Australian with Japanese influences.
There have been two distinct menus designed for the restaurant – a fast, fresh a la carte for lunch, and a more extensive, shared concept for dinner. A lengthy cocktail selection, craft beer and wine will round out the venue’s offerings.
