Calling all sushi fans: Hiroyuki Sato is in town for one night only.
For Japan, sushi isn’t something taken lightly. To be heralded as an expert takes years and years of training.
But Hiroyuki Sato is considered one such sushi master. The young gun has garnered plenty of acclaim in his hometown of Tokyo for his internationally renowned Hakkoku restaurant, where Sato pushes the envelope when it comes to the traditional cuisine. Now Sato will be making his way to Australia, taking over famed Bondi venue Icebergs for one night only where he will showcase his skills beachside.
For his first trip to Australian shores, Sato will be joining forces with Icebergs executive chef Monty Koludrovic to produce a six-course tuna menu inspired by the produce found during Sato’s daily visits to Tokyo’s Tsukiji Fish Markets. Dinner will be served with matching saké prepared by sommelier James Hird.
It’s through Koludrovic that Sato’s Australian stint came about. Maurice Terzini and Koludrovic first met Sato after making the pilgrimage to his Ginza restaurant in Tokyo earlier this year. Hakkoku (meaning ‘black and white’) is an authentic sushi restaurant sculpted around the concept of Edo-Mae sushi, a cuisine created during the 1820s. It’s typically saltier and sweeter than other Japanese cuisines, thanks to its rice being seasoned with vinegar.
