And they claim it’s the most Italian of their Italian ventures.
Sydney’s love affair with Italian isn’t over just yet thanks to a continuing influx of eateries with a fervour for Mediterranean fare. The most recent addition to this camp is Bonnie’s Wine & Food, another casual offering from Icebergs Group to join its growing brood of Italian-inspired ventures. Interestingly enough this new dining destination from the Icebergs crew is not a stand-alone venue, but rather is set to opening within the existing Bondi Beach Public Bar.
The Campbell Parade haunt recently hosted the Pizzeria Beddia pop-up, constructing a restaurant within the pub with walls largely constructed from spray painted cardboard. Those remnants of the pop-up will remain, and will now permanently play home to Bonnie’s.
The opening of a separate dining space within Public Bar may surprise locals, but it was always a part of the plan says executive chef Monty Koludrovic. “The idea was always to build something in that space,” he admits, “But we opened on December 20 last year, which is really just a time to hold onto your trousers when it comes to business. It was always going to be easiest to welcome a restaurant down the track.”

The resulting Bonnie’s Wine and Food is a true traditional Italian extravaganza. The “daggy Italian” is what Koludrovic considers to be “the most Italian of the venues” thanks to a combination of check tablecloths, and dishes designed to be shared. Meals are also served on traditional silver plates; in fact if it didn’t fit on the tray, then it didn’t make the menu.
There is plenty of pizza of course, though a different take on the pies typically served up in the 2026. These are served alongside fresh fish-based dishes like sardines with salsa verde, and oysters with horseradish vinegar. No doubt to the delight of many a Bondi local, there’s also a handful of salads planned to accompany.
Bonnie’s will operate with the same hours of public bar, which means that a feed will be available to you late, even on school nights. Also of note; fans of the squish burger need not fear, the bar menu will remain intact and served front of house.

Bonnie’s Wine & Food will officially be open for business Wednesday September 19.
