Noma is popping up in Kyoto which is one more reason to get to Japan

Japan is hardly starved for culinary experiences. The Land of the Rising Sun is not only one of the world’s most exciting food destinations it also boasts the highest number of Michelin-starred restaurants in the world. To top it off, the island nation will be hosting an exclusive pop-up by internationally-acclaimed fine diner Noma next year.

Chef René Redzepi has partnered with Ace Hotel Kyoto for a 10-week run
opening on Wednesday, March 15, and closing on Saturday, May 20, 2023.

Noma will take over Ace Hotel’s 64-seat restaurant, putting up a tasting menu inspired by the unique food culture and culinary history of Kyoto. The new pop-up is the fourth global residency for Noma, with successful stints in Sydney and Tulum.

“I believe Kyoto to be the birthplace of the western tasting menu, and it remains one of the most important cities through which to understand the fine dining scene today,” René Redzepi, chef and owner of Noma said.

“We have been working on this specific project for the past two years, and we have had a team on the ground since late spring, foraging and researching what will form the foundation of our Kyoto menu. Our main inspiration comes
from the very heart of Kyoto, the kaiseki cuisine, while not at all being a Japanese restaurant. We come to be inspired, to learn, to absorb new creative processes and to hopefully bring back new perspectives and a clearer vision for how to be Noma.”

The Noma Kyoto residency will run from March 15 – May 20 with the restaurant opening four days a week. Each day will include one lunch and one dinner seating. Reservations will open on Monday, November 7 at 7am EST / 1pm CET / 9pm JST / 11pm AEDT via noma’s newsletter. Ace Hotel Kyoto’s website will also offer an accommodation package that includes a minimum of two nights of accommodation at Ace Hotel Kyoto, plus access to a lunch or dinner reservation for two people at the noma residency, with prices starting at ¥120,000 JPY / $830 USD / €846 EUR for two people.
