Pilu brings casual Italian to North Shore

Family friendly venture Acquafresca is en route, courtesy of the two-hatted chef.

While Giovanni Pilu may best be known for his sumptuous takes on Sardinian fare, it’s a far less formal path that the chef will be taking on his latest venture.

Joining the much loved two-hatted Pilu at Freshwater, Pilu has introduced Acquafresca to the North Shore. The venue has formed apart of the huge new Harbord Diggers development, with views that stretch across neighbouring Freshwater Beach. The 120-seater welcomes small and large groups alike, with an open plan structure including a communal table (and open kitchen) in the works.

Sardinian cuisine will remain at the forefront, with a menu that Pilu explains will be kept very simple. Pizza, pasta, and a little antipasto is on the cards. “I am very passionate about pizza,” says Pilu. “Of course only pizza made with beautiful ingredients. I want to make sure it’s only top, top notch what we offer. We really focus on the base. To make it we are going to use a flour that has been especially made for us in Sardinia.”

Joining the traditional pizza options will be a series of pasta dishes (four or five that will rotate regularly), as well as some desserts. Luckily for the young (or young at heart) also in the works is a gelato cart to cater to the Acquafresca guests, as well as passers-by.
