Here's the scoop on Sydney's one and only hummus bar

If you thought your own homemade hummus was good, just wait until you try this.

Lovers of the blitzed chickpea dip will be excited to learn that Sydney is home to a dedicated hummus bar – and its got all-you-can-eat hummus on the menu.

Called Simply Hummus Bar, the new Darlinghurst venue started life as a market stand at the Entertainment Quarter in 2018, before launching its first bricks and mortar store this year.

In a surprising move, the new venue serves just one kind of hummus and it took owner Yoash Dvir a year to get the recipe just right.

“Naturally, we use chickpeas, tahini, lemon, garlic, olive oil and spices, but it’s about the quantities and the texture,” he said.

Controversially, Dvir has chosen to go with a thicker, chunkier hummus, but has plans to add a silky smooth version to the menu down the track.

What separates Dvir’s hummus from the supermarket tubs is the fact that it’s preservative-free, made from dried chickpeas – not canned, and blended fresh on-site each day.

Diners can choose to top their dollop with extras like falafel, tabbouleh, sautéed mushrooms, onions or Israeli salad, and each serving comes with a disc of house-made pita.

In the evenings, you can also put your hummus eating to the test with the all-you-can-eat hummus, which includes unlimited toppings for $23 per person. You can also get the party dip to takeaway – whether you try and pass it off as your own is entirely up to you.
