Even better than waking up to presents on Christmas Day is rising to lightly toasted panettone with coffee on Boxing Day. While it may hog the space a little, no festive table is complete without the big golden dome studded with fruit peel and seductive spice.
If you’re on the hunt for a particularly lovely loaf this year, Sonoma Bakery and Icebergs Dining Room & Bar have teamed up to deliver an Aussie take on the Italian classic.
Made in the traditional style, the panettone uses a sourdough starter and a three-step fermentation process, which helps to deliver soft sour flavours and aromas.
The dough is then combined with Pepe Saya butter and Heilala vanilla, along with roasted macadamias, Davidson plums, chocolate chips and sour cherries soaked in a lemon myrtle syrup.

After a short time in the oven, the panettones are hung upside down to preserve their unique dome shape and internal crumb structure.
The Sonoma x Icebergs panettone is priced at $35 and is available to buy from Icebergs Dining Room and Bar, CicciaBella, The Dolphin Hotel, Victor Churchill, and DRNKS in Sydney from Monday, December 16, 2019.
