Bondi’s fine-dining institution is heading to Byron, where it will get a punk rock makeover.

The hot chips and gözleme at Splendour in the Grass will be up against some stiff competition this year, with Icebergs Dining Room and Bar announcing they will pop-up at the North Byron festival.

It’s the second year in a row that the festival has gone fancy, with Splendour signing on Matt Moran’s garden restaurant Chiswick last year.

Rather than trying to recreate the seaside stalwart, Maurice Terzini will reinvent Icebergs with a punk rock bent, creating a brand new offering better suited to the festival’s energy levels.

The 100-seater dining space will offer a tranquil place to rest between sets, with the pop-up positioned in a private and picturesque location, overlooking a lake.

Icebergs’ executive chef Monty Koludrovic will create a special menu for the occasion, which will include upscale Italian dishes like nodini di mozzarella, Yarra Valley caviar croquantes, and candied macadamia and chocolate tiramisu, with vegetarian and vegan options also available.

An onsite bar will also be erected, with Matthew Whiley of Scout Sydney shaking up bespoke cocktails, sponsored by Smirnoff Infusions, which will sit alongside an extensive wine list, curated by group sommelier, James Hird.

The special 3-course menu will be priced at $148.50, with 2-hour sittings available throughout the day, from July 19 – 21.  For details or to book, head to splendourinthegrass.com.
