Thanks to a rather experimental new Melbourne pizza parlour.
Pizza purists beware, you’re not going to like what you’re about to read. For a new Melbourne pizzeria has turned its back on tradition, embracing instead experimentation when it comes to the toppings sitting atop its dough. Stretched Pizza has just landed in Coburg, a space that serves up the self-proclaimed whacky when it comes to pizza, but created with premium, locally-sourced ingredients.
The stand out creation is pho-meets-pizza the ‘Un-Pho-Gettable’, which melds together steak, Spanish onions, Sriracha sauce, sprouts, and Vietnamese basil on a pizza base. But that’s not the full extent of the venue’s experimentation when it comes to dough.
For those feeling a little dusty there is also ‘Try the Hangover’, where lean ground beef is layered with bacon, gherkins, American cheddar, ketchup and mustard sauce. Traditionalists and vegans alike also get a look in, with takes on the capricciosa, as well as five vegan and seven vegetarian options interwoven in the menu.
Stretched Pizza comes from the same team behind St Kilda’s much loved Pizza e Birra, and brunch spaces Long Story Short. Their new foodie venture takes its name from its preferred pizza-making technique, hand-stretching as opposed to rolling with a pin. It’s a technique that causes the dough to stretch naturally, resulting in a even crust and fluffy base – the perfect canvas for layering on some rather unusual ingredients.
