The Melbourne fine dining institution arrives in Gordons Bay.
Melbourne is a mecca for the foodie, with one of its biggest draw cards undoubtedly the immersive Vue de monde. But Shannon Bennett’s fine dining restaurant moved much further north last night to the heart of Sydney’s Eastern suburbs.
The arrival of the Melbourne institution Sydney-side was a part of the Stella Artois Sensorium. The pop-up was based for one night only in a waterfront home that welcomed a gaggle of media and VIPs. Shannon was in charge of the multi-sensory dinner, serving a series of courses inspired by the flavours and characteristics of the historic Belgian beer brand.
“So much of the Vue de monde experience is about how the typically distinct elements of dining speak to one another; the architecture, the interiors, the food and, of course, Level 55’s iconic view. Taking that experience and having it reinterpreted in stunning Gordon’s Bay takes those same elements but puts them in a whole new light, it’s really quite remarkable,” says Shannon of his involvement in the night’s festivities.

To accompany Shannon’s multi-course menu was a special Stella Artois bar – the custom designer space provided a show of the brand’s famed nine-step pouring ritual for guests to enjoy. These traditional methods are at the heart of the Belgian company, which has now been pouring for the world for more than 600 years.
The night’s immersive experience also showcased the brand’s first Australian TV campaign, documenting the story of founders Sebastian and Isabella Artois. Relishing in its history is integral to Stella Artois’ identity says CUB Brand Director Brian Phan. “Sebastian Artois both made decisions that had a huge impact on Stella Artois’ history and success that is still being enjoyed today. Although these events took place centuries ago, their stories show a determination and ability to break through barriers that are still relevant and inspiring for people today,” he explains.
