Sydney hospitality group Applejack are on the move, expanding into the city centre with their first Sydney CBD location this November. 60 Carrington Street will shortly become home to Bopp & Tone, a venue named after the grandfathers of founders Ben Carroll and Hamish Watts, Keith ‘Bopp’ Evans and Anthony ‘Tone’ Adams. “We want to create an intrinsically Sydney experience within a unique and distinctive setting. Bopp & Tone is a nod to our grandfathers, who symbolise and embody the iconic and nostalgic Sydney of the past, which is reflected in the venue. Food influences come from our chef’s passion for Mediterranean food and philosophies that translate so well with Australian ingredients and the Aussie way of life,” say the duo.

Bopp & Tone is self-described as a ‘Sydney-made restaurant and bar with Mediterranean influences.’ The optimistic post war era of the late 1940s has inspired the new space, which is both opulent and relaxed at once. Designed by Luchetti Krelle, the restaurant embraced heavy marbles, classic tiles and textures, and dark timber furnishings throughout. Within the space you’ll find an alfresco dining terrace, private dining room and an abundance of greenery, which has become somewhat of an Applejack signature.

That’s been created by head chef Sa Va’afusuaga and group executive chef Jason Roberson. Fare is centred around the ‘honest’ and the ‘generous’ with a slight Mediterranean twist. What can be is cooked over a woodfired grill or charcoal oven, with stand-out dishes including char-grilled whole Hawkesbury river calamari, free-range spatchcock, and pasture-fed Brooklyn Valley steaks.

Group Bars Manager Lachy Sturrock and Bar Manager Craig Kerrison are behind the cocktail list, which features all the classics, albeit intertwined with a few surprising (and Australian) ingredients. As for the wine list, that’s been taken care of by sommelier consultant Dan Simmons. His resulting list champions those involved in sustainable viticulture and oenology in Australia and abroad.
