Melbourne food truck Sliders on Tyres is no longer on the move – the portable burger hub has found itself a permanent home in the inner-west suburb of Sneddon. Owner Owen Scungio has dubbed his first flagship Slider Diner, an eatery that continues to focus on their cult-favourite sliders. Scungio’s experience across eateries, including the Hyatt Hotel Canberra and Vue de Monde, have helped to shape the burger-laden menu, which now also features fellow American favourites – sweet pies (like this S’mores pie with ice-cream).

There’s plenty of choice for slider fans, stand-outs include the lamb slider (slow-cooked lamb with taramasalata and house-made pickles), and the cheeseburger (a mix of cold-smoke American cheese, freshly ground chuck meat, burger sauce and pickles) among others. Everything here may be American in flavour, but is Italian in concept, thanks to Scungio’s heritage. His mantra? Three to four ingredients is all you need in a dish. “Diversity in flavour isn’t always solved with adding ingredients; it’s often about reducing the number of elements in a dish to let the flavours speak for themselves,” he explains. It also helps that everything at Slider Diner is made in-house, or locally.

Abbotsford-based Ruined City Architects have taken care of the fit-out which is a take on the traditional 1950’s diner. Bright has obviously been the memo – the casual eatery is awash in vibrant baby pink and blue, accompanied by terrazzo aplenty and a statement Saturday Night Fever mural out back.
