Then we’ve got something that’s right up your alley. This week marks the opening of dim sum hub Canton! Canton! to inner-city Sydney. It’s the first restaurant from new dining group The Jewel Pantry, and is an eatery inspired by the hustle and bustle of Canton’s vibrant markets. Think heaped piles of roast meats and a vast array of home-style dim sum, created by executive chef Jacky Chan and his team.

From dim sum to rice treasures and finely roasted meats, Canton! Canton! is raising the local game with its Guandong Province cuisine. Interiors are modelled off the street markets of Canton, with jade-green washes, exposed brick and booths inspired by opium beds, punctuated by decorative lanterns. Crystal prawn dumplings are delicate, braised chicken feet are a gelatinous joy and glutinous rice laced with chicken and shiitake mushroom is glorious. Pork floss and chilli add a nice exclamation mark to fried tofu, while the pick of the nine congees is a traditional salted egg number with pork.

Running the kitchen at Canton! Canton! is executive chef Jacky Chan, a man who has spent the past 28 years perfecting the art of dim sum. Chan first studied under the tutelage of his father, landing the gig of head dim sum chef at Shangri-La Hotel in Singapore, before joining the Tim Ho Wan group in 2016. Chan hopes to transport guests to the capital of Guangdong, the ‘epicentre of Cantonese culture’, with his new menu which celebrates the key five Chinese flavours; sweet, sour, bitter, savoury and salty.

Open daily from 11.00am, the eatery begins service with a traditional array of yum cha where dumplings of pork and prawn, topped with flying fish roe, are served alongside specialty dish Phoenix Claws’ (braised chicken feet served on a bed of bean curd skin), BBQ pork buns and pan-fried radish cakes. For something heartier at lunch, guests can dine on a serving of congee, served signature-style with fish fillet, jellyfish, pork rinds and peanuts. There’s also a Hong Kong roasting station that will be doling out a selection of roast duck, crispy pork belly and char siew.

While this may be the first venue for The Jewel Pantry, this certainly won’t be the last. Taking over the former home of the Tim Ho Wan outlets on George Street and Pitt Street Mall in Sydney CBD, The Jewel Pantry Group is also ready to launch takeaway offering Mr. Fatt in coming months.
