This Las Vegas-inspired cocktail bar is the first drinks-focused venture from pizza specialists, Maybe Frank. Creative director and former Bartender of the Year Andrea Gualdi leads up a team of award-winning bartending talent, which includes movers and shakers like Martin Hudak and Balazs Molnar. The menu is made up of eight signature cocktails, modern remakes of classic favs, each one inspired by the Rat Pack’s favourite haunts. Tipples are far from the typical, with many presented alongside magic tricks and sensory performances. There will also be a small tasting menu of cocktail minis available for just $10 a pop.

There will be eight signature cocktails which form the main drinks list at Maybe Sammy, all a modern interpretation of a classic cocktail and named after some of the Rat Pack’s favourite haunts. These tipples are far from the typical and are presented alongside magic tricks, and scented hand cream (to elevate the sensory experience of course) among others. There’s Circus Circus (Bulleit Rye whiskey, Martini mbrato vermouth, mint, and poblano), Lady Luck (Ketel One vodka, mango, passionfruit, and lemon) and Thunderbird (Aperol, Americano Cocchi wine, Becherovka, house-made jasmine kombucha, and grape rocks) among others.

Obviously; this is a cocktail bar after all. A small tasting menu of classic cocktails dubbed ‘mini’s are also available for $10. Again named after the Rat Pack (we sense a theme) there’s The Mini Martini (vodka or gin, olive, citrus), The Frank (Wild Turkey Rye, dry vermouth, bitter Campari), The Sammy (Never Never gin, mint, sweet and dry vermouth) and The Dean (Plantation 5yo rum, Calvados, Swedish punch). For those with a sense to splurge there’s also a High Rollers section; a collection of cocktails beginning at $70. This tipple sector includes a Champagne Cocktail made with Hennessy XO cognac, champagne, sugar, bitters and orange zest (priced at $110) and Dean Martin’s signature cocktail; Flame of Love Martini with GreyGoose VX vodka, Fino Sherry and orange zest (priced at $80).

Perhaps a sign of the times, there’s an impressive array of sophisticated alcohol-free drink options to enjoy. The Purification cocktails as they are called are $14 each, and range from a Ciao Caio Bambino (Seedlip grove, coffee, citrus, and tonic), to a Kombucha of the week. For those who do wish to indulge in a little booze there’s not only the lengthy list of cocktails already described, but a selection of vintage Champagnes, international wines, spirits and Australian beers.

The design of the space has been described as Hollywood Regency-meets-Palm Springs. 1950s glam is at the heart of the bar, with the final design all thanks to the hard work of LD Studio. It’s not a drinking den that’s afraid to be bold; rather its a venue laden in pink and green velvet, tropical wallpaper, brass fittings, smoked mirrors and marble tiles. Maybe Sammy doesn’t want to take itself too seriously, says Vince Lombardo, it just wants to have some fun. ““You can have the best bartenders, an amazing cocktail list and a beautiful space but if none of that is delivered with personality, then you’re just another cocktail bar. The experience of drinking at Maybe Sammy will be what is most memorable, and our bar staff are at the heart of that. They take their craft seriously, but they know how to have fun and they want to make sure that everyone who has a drink with us, enjoys the venue as much as we do. We’ve spent a year refining the concept, from cocktail list to the interiors to what we want our staff to wear and have produced a venue we hope sets a new standard in Sydney.”

Of course when drinking it’s important to line your stomach. Understanding the importance of this concept, Maybe Sammy created a lengthy list of bar snacks designed by Maybe Frank chefs Alessandro Leveratto and Stefano Sepe. Think along the lines of plates of olives, oysters, charcuterie, as well as robust cheese boards to nibble on. All dishes can be enjoyed throughout the 70-seat venue, where guests can nestle into pink velvet banquets and leather-clad seats and high stools.
