Thankfully with spring’s arrival comes some warmer weather to Sydney’s shores. The best way to spend these evenings may be out of doors, preferably on a roof of some sort thanks to the influx of rooftop bars the city is currently experiencing (but we’re not complaining). The latest addition to the growing fleet is The Rooftop, the revamped top level of Pyrmont institution the Quarryman’s Hotel.

The Rooftop certainly loves a theme, embracing Palm Springs as its inspiration for both interiors and fare. Design guru Matt Woods (of Bloodwood and Devon fame) has taken care of styling, swathing the space in pastels and clean lines, and accessorised by plenty of cactus. There is both indoor and outdoor area in which to relax, made comfortable thanks to a collection of mid-century pieces to lounge on. The eclectic drinking space is the perfect watering hole for the population of creative agencies that inhabit the buildings nearby.

The Rooftop’s menu is a self-proclaimed ode to pub classics, with a handful of American favourites thrown in for good measure. There’s chicken tacos with salsa fresca, chunky guacamole, and buffalo wings with blue cheese sauce. There’s also a salmon poke salad (partnered with ginger and mentsuyu sauce) and a pickle-fried chicken burger for those after something a little more substantial.

Palm Springs vibes continue through to the drinks list. Of course it being a part of a pub there are plenty of craft beers to enjoy, from Young Henry’s, and Balter, to Stone & Wood. But the venue’s passion is its creative range of cocktails. There’s the Apple Cider Slush (which mingles Young Henry’s Cloudy Cider and House Made Honey Syrup) or the Palma Rosa (with El Jimador Blanco, Rosé, ruby grapefruit juice and ginger syrup) to take your fancy among others.
