The menu will consist of over 50 indigenous ingredients. Yes, including ants.
There’s almost no need to leave Sydney these days, with so many of the world’s best restaurants and bars visiting the harbour city and sharing a taste of what they do. The latest high-profile pop-up to touch down in Sydney will be Restaurant Orana, the award-winning Adelaide eatery, that’s often compared to Noma in Copenhagen and Sao Paulo’s D.O.M.
Restaurant Orana, which means ‘welcome’ in some Aboriginal languages, is known for its dedication to Indigenous ingredients and culture. Its menu manages to strike a happy balance between native and introduced foods, with dishes like crocodile soup, marron with Geraldton wax and green tree ants and potato damper cooked at the table on eucalyptus twigs.

“There’s been a blindspot when it comes to acknowledging and preserving Indigenous foods and culture, and that’s why we’re bringing Orana to Sydney,” said head chef and owner, Jock Zonfrillo.
“We know this will help give Indigenous foods and culture more awareness and recognition, and shift the mindset around the acknowledgement of just how special the oldest surviving culture in the world is, and it’s right here on our doorstep.”
Zonfrillo and his team will put together a special menu for its Sydney residence, which will incorporate produce from Indigenous communities across Australia.
Diners can expect a degustation of around 22-23 courses, which will be made up of over 50 indigenous ingredients.

“We’re talking seeds, fruits, nuts, trees, shoots, shellfish, honey, ants, seafood – all the flavours and textures that represent this beautiful country we live in,” he said.
Taking over the former Longrain site, interior designers SJB will create a new space for Orana, which will be inspired by the ancient sand dunes, sandstone outcrops, banksia trees and wetland plantings that were once part of the local landscape.
Ten per cent of profits from Orana in Residence will go towards Zonfrillo’s not-for-profit, the Orana Foundation, which fosters the preservation of indigenous food culture.
Orana in Residence will run from August 16 – Sep 15 at 85 Commonwealth St, Surry Hills. The food menu costs $350 per person with bookings taken from 9am, July 9 from the Restaurant Orana website.
