Who
Young-gun chef Charlie Carrington’s South Yarra restaurant Atlas Dining is known for rotating its cuisine every three months inspired by his overseas adventures. Carrington is also behind Lomah restaurant in Prahran, and now his at-home cooking experience Atlas Masterclass.

Pick-up or delivery?
Delivery only. Order by 5pm the Thursday prior, with ingredient boxes delivered each Tuesday or Wednesday for the Wednesday follow-along-at-home class. Delivery is $9.99 for metro and $12.99 for regional orders. Unlike most restaurant delivery services, Atlas Masterclass isn’t just for inner-city Melbourne, with outer suburbs such as Pakenham, Frankston and Cranbourne included in the delivery zone.

The lowdown
Atlas Masterclass champions a different cuisine each week. Carrington teaches you how to prepare each meal through an online video tutorial. Atlas Masterclass has featured Vietnam, Thailand, Brazil, France, China, Peru, Israel and Korea boxes, and the week we order it’s the US.

Each box comes with a mix of ready-to-heat meals and produce that’ll need preparing. All vegetables and meat are of excellent quality. The first night’s meal, shallow-fried chicken with collard greens and mac and cheese, requires more time and patience to make than the others. It takes us an hour to prep and cook the chicken, which needs battering, shallow-frying, oven-cooking and then another turn in the pan to crisp. This doesn’t include the time to cook the mac and cheese and kale and potato sides.

The American chilli and smoked beef brisket, however, had fast turn-arounds, with meals on the table within 30 minutes. The pre-smoked beef portion (vacuumed-sealed in plastic) was fall-apart tender after being gently warmed in boiling water. It had plenty of flavour, and was made even better by Carrington’s house-made, pepper-packed barbecue sauce. These meals are designed to make the midweek rush easier. Sadly, there’s no dessert.

Atlas Masterclass is designed to feed you for three nights. You can order single serve, couples, families (serves four) and groups (serves six). The couples serve is substantial so you’ll have leftovers for the next day. Vegetarian options available.

Price
Single-serve boxes start at $49, couples $79, family $99 and groups $139. Prices vary depending on the ingredients and cuisine.
