The highly anticipated new opening by Ben Williamson and the hospo legends behind Same Same and Honto does not disappoint.
When word first spread that Brisbane-based chef Ben Williamson would head up a new Italian trattoria, Fortitude Valley diners knew great times were imminent. Following the opening of Bianca in March, repeat visitors confirmed this striking venue was a triumph.
Envisaged by the team behind Agnes restaurant, Bianca is named after Milan-born co-owner Bianca Marchi – a fitting moniker for an elegantly outfitted setting. This space is the product of architect duo Richards & Spence, the masterminds behind The Calile Hotel. Though Bianca may be touted as a trattoria, it offers a refined menu with dishes that are both familiar and original. Leisurely repasts begin with refreshing crudo followed by antipasti plates (figs with finely grated Fiore Sardo pecorino).

Light fritti bites come next, tailed by sharply dressed grilled seafood.
The pasta selection presents standouts (fermented pumpkin and ricotta agnolotti), while excellent mains include porchetta alla Romana. Contorni need not be overlooked – broccolini with almond cream wins hearts – and desserts include citrus sorbetto.
And then there’s the lengthy drinks menu featuring Italian spirits, excellent wines and pleasingly bitter cocktails.
If you’re impressed by how fast these dishes and sips arrive at your table, you’ll be stunned by how speedily each mouthful disappears from it too.
