A multisensory dining experience by two top chefs has opened at The Star Sydney

Taste is just the beginning.

Federico Zanellato (Lumi Bar & Dining) and Karl Firla (Oscillate Wildly, Est, Marque) are bringing the sparkle back to The Star with an immersive new dining experience that plays on light and sound.

Named after the elements, ELE by Federico and Karl takes guests on a sensory journey inspired by earth, fire, air and water.

“This is a progressive experience where you move around the whole restaurant while you eat, discovering new dishes, sounds and sights each time you sit down,” Federico Zanellato said.

Diners will start their evening at The Bar for a welcome cocktail and snack, before making their way to The Dining Room for the main course. To finish, dessert is served at The Chefs Table.

The former Momofuku Seiobo site has been completely transformed with audio and visual elements, and each area will have its own distinct look and feel.

The menu is made up of technique-driven dishes and, like the projections on the walls, it will change and evolve with the seasons. Dishes might include the sourdough crumpet with wagyu tartare and confit egg yolk, or the Western Australian marron served two ways – the claw as a pikelet and the tail glazed with pain perdu.

The drinks list will include all the usual suspects, with the highlight being the Elemental Cocktails. Diners will be able to try gravity-defying concoctions like the air-inspired ‘So Aerate’ spiked with 30 Starwood Whisky, wattle seed tincture, blue gum honey mead and soda, or the earth-inspired ‘Fresh Cut Myrtle’ with Brix white rum, lemon myrtle and coconut sorbet and Louis Roederer NV Champagne.

The ELE by Federico & Karl degustation menu is priced at $255 with matching wines for $140/$170.
