Guy Grossi is finally bringing his dishes to Sydney

You can finally tuck into that famous pasta of his outside of Melbourne.

Guy Grossi may be famed for his Italian cuisine,  but the chef’s dishes were (until now) only to be found in Melbourne.

That’s all set to change thanks to a new collaboration series called ‘Luke & Friends’ at glass brasserie in the Hilton Sydney. The partnership between glass’ Luke Mangan and Guy will see a series of jointly crafted dishes launch until the end of 2017.

“Both Guy and I take pride in the whole dining experience – not just the food we serve. We understand our guests want to be blown away with innovative concepts, engaging experiences and the element of surprise. That’s exactly what we’ve done with this menu,” says Luke of the decision to join forces.

How does it work? Well both Luke and Guy have selected two signature dishes from Guy’s Melbourne restaurants to sit on the existing glass brasserie lunch selections. A Flinders Island lamb, crumbed and drizzled with tomatoes, onion, parsley, sage, rosemary, salt and pepper, will land on the a la carte lunch menu. Of course there will also be pasta – a spaghetti vongole to be specific, which will be available as a part of glass wine bar’s $29 lunch menu. The dish itself is a concoction of vongole deglazed with white wine and served with garlic, chilli and parsley.

Guy says that he jumped at the chance to work with Luke again. “It’s always a good time when I get the chance to play with Luke. We are both passionate about what we do, and we look forward to doing more together in the future,” he says. “This menu collaboration allows Sydneysiders the opportunity to try a selection of my signature dishes without having to travel to Melbourne, which is a nice opportunity for those who appreciate my style.”
