It's the first restaurant outside of Melbourne for the celebrity chef.

Having already successfully established a strong foothold in Melbourne’s dining scene, celebrity chef Guy Grossi is looking west – to Perth to be exact where he his next restaurant is about to make its debut.

Grossi’s famed Italian will be making the trek across the Nullabor, setting up shop as Garum in The Westin hotel, the both of which will open in April of this year. The luxury accommodation option will sit in the historic Hibernian Hall, in the east end of Perth’s CBD. The restaurant itself will consist of a main dining space, an outdoor area, a private dining room and a bar, with the latter offering up its own snack menu.

As for Garum, guests can expect to see Grossi’s signature Italian brought to the west coast, but this time with a particular focus on ancient Roman cooking traditions. Inspired by the Italian city’s Osterias, the venue will merge together Roman flavours with contemporary techniques. There will also, of course, be plenty of wine to choose from, with a focus on the region of Lazio, as well as WA’s plethora of local producers.

“In Melbourne we have nurtured a strong sense of community for three generations and it is this ethos that drives the restaurants day to day,” explains Grossi of his decision to move into the Perth dining scene. “It doesn’t just include our city but extends to all those that we deal with in our industry and beyond. It’s through these interactions that we have had the pleasure of many significant connections with Western Australia and its people over the years. From using its amazing produce on our menus and at world expos to connecting with locals at events such as Gourmet Escape.

“We have come to experience the great nature of hospitality in this part of the country and we are hooked. When the opportunity arose to work with BGC Development and The Westin on a project as exciting as this we were naturally inclined to say yes.”
