A celebration of native flora and fauna takes to the west coast.
Indigenous ingredients are hot property in the food world right now. If you are after an innovative celebration of native fauna and flora when it comes to food you may need to head west – to the COMO The Treasury to be precise. The luxe new accommodation option in Perth has just introduced a Wildflower Experience to its menus.
The experience itself is a self-described ‘culinary journey through the area’s freshest local indigenous produce”. Traditionally, indigenous ingredients were determined ripe for eating by the blooming of the west coast’s 12,000 species of native wildflowers. Just how this is done will be a part of an immersive experience for guests, who will be given a guided indigenous heritage tour of Perth’s Kings Park to showcase the different species of wildflower show the tribes used these to forage for food prior to their meal.

As for the feast itself, guests will then tuck into a five-course tasting menu designed by COMO The Treasury’s executive chef Jed Gerrard. It’s intended to showcase the best of in-season produce, revolving around the six different indigenous seasons. There’s a southwest marron paired with native river greens, puffed seaweed, avocado and head cream. And there’s also the Wildflower signature dish of Arkady lamb is wood grilled on a custom-made grill and paired with artichoke, saltbush, peppermint tree cream and malt oil to enjoy. All paired with the sommelier’s selection of fine wines from local districts. To make the occasion a memorable one, COMO The Treasury will also include a two-night stay with the meal.
“The blooming of different native wildflowers mark the changing of each of the six indigenous seasons,” says chef Jed Gerrard. “At Wildflower, this guides our dining offerings. We aim to showcase the best of each new season and give our guests an authentic West Australian dining experience.”
