The Coogee Pavilion rooftop is set to get a lot less crowded, with three new offerings to tempt revellers mid-way up.
The newly opened middle level is home to three venues, a Mediterranean restaurant and bar called Mimi’s and Will’s, which were named after Justin Hemmes’ parents, and a Spanish tapas bar called Una Más. All venues are overseen by executive chef Jordan Toft, formerly of Bert’s and Bar Topa.

Mimi’s
Surrounded by the sandcastle’s famed arched windows, Mimi’s offers an upscale Mediterranean dining experience. The menu revolves around the highest-quality meats, seafood and produce, which are served simply. “What you order from the menu is exactly what you see on the plate,” Toft said. Expect refined offerings like barbequed blacklip abalone skewers, salt-baked butternut squash with fig leaf oil and pipis in a pancetta broth with urchin bottarga.

Will’s
Sitting side-by-side with Mimi’s, Will’s serves as an accompanying cocktail bar. Ben Wainwright from Bert’s and Luke Ashton from This Must Be The Place have teamed up to create the drinks list, which takes its cues from the Italian coastline. Signature drinks include The High Tide, made from limoncello with yellow peach and prosecco, and Willy’s Martini, which can be ordered dry, wet or dirty.

Una Más
Una Más, which translates to ‘one more’ in Spanish, is The Pav’s new Euro wine and tapas bar. The menu reveals simple and recognisable dishes, with influences coming from around the Balearic and Adriatic Seas (think Spain, Italy and Croatia). Offering a more laidback experience, beachgoers are invited to kick back with a charcuterie platter or crudo with salted pineapple and a glass of sherry.
